No-Bake Energy Breakfast Bites
These ‘No-Bake Energy Breakfast Bites’ have become my favorite meal-prep to create every Sunday before the week starts. Prep your meals on the weekend so you don’t fall off the healthy eating patterns during the week!
The best part – you can literally make hundreds of different varieties of these bites, so you never have to get bored with only a few flavors.
The majority of the ingredients are a variety of ground nuts and seeds. I also like to add other ingredients such as dried fruit, raw cacao nibs, peanut butter, or even chocolate vegan protein powder.
Preparation time around 10-15 minutes so you can’t complain about that! They can be stored in the fridge for around 3-4 days, so it’s a perfect way to have a quick breakfast before running to work or a pick me up in the afternoon!

Pumpkin Pistachio Pineapple: The ingredients are cashew, pumpkin seeds, chia seeds, dried pineapple, honey and coconut oil.
Chocolate Strawberry: The ingredients are cashew, chia seed, almonds, chocolate vegan protein powder, raw cacao, dried strawberries, all spice, cinnamon, honey, and coconut oil.
Main Ingredient Options:
Vegan Protein Powder (I prefer chocolate!)
Raw Cacao Nibs
Coconut Flakes or Powder
Other Ingredients Necessary:
1. Once you have your selection of nuts and seeds, put them into a food processor and make sure they are ground or in small course pieces.
2. Mix the ground nuts and seeds together in a bowl. Add your other optional ingredients (protein powder, dried fruit, raw cacao, peanut butter, all spice, cinnamon, honey, etc).
3. For 2-3 cups of mixture, add about a half cup of coconut oil (healthy fats! Keep you full longer for the day) and a few tablespoons of water and mix thoroughly with your hands. You want the mixture be sticky enough that you can roll it into balls. Not to much liquid, start small and add more.
4. Roll the mixtures into 1-2 inch size balls. Put into a closed lid container and store in the fridge. Let sit at least 1 hour before eating. Enjoy your breakfast bites!
