Chia Seed Pudding has become my favorite breakfast. Not only does it provide all the nutrients you need to jump start your day (it’s a perfect combination of carbs, protein, and fats – high in Omega-3’s, and minerals such as phosphorous and manganese), but it keeps me full all the way to lunch (thanks to the high fiber content!). Never miss a breakfast again if you plan ahead.
There are endless recipes you could follow to make chia seed pudding. I say whatever you have that sounds good, throw it in! I like to make mine a combination of fruit, nuts, seeds, and spices. The following recipe is just a sample:
What You Need:
Milk of your choice (I prefer Coconut, Hemp, or Almond)
Variety of nuts, seeds, dried fruit, and fresh fruit
1. Soak the chia seeds over night with your milk preference. I use about 1-2 tbsp’s of seed with about 1/2-2/3 cup of milk. I soak mine in a mason jar so that in the morning I can throw in all the extra ingredients and take it to go!
2. In the morning, cut up fresh fruit or dried fruit (or both) and mix it with the chia seeds and milk. Add nuts and seeds (I usually add walnuts, pistachios, and pumpkin seeds).
3. Sprinkle in some cinnamon, and a teaspoon pf honey. Close the jar and take it on the go with you.
